Just a quick post today to wish you a Happy Thanksgiving!
Jeff got up early and put the huge turkey in the smoker, it just fit! Last year he smoked one and it was so good and then we froze a bunch and used it later for smoked turkey enchiladas. They were so delicious so we are thinking of doing the same thing this year and do it for Christmas and make it a mexican food Christmas instead of ham.
What do you think? I made a pumpkin pie and cherry pie yesterday. So today I just need to do the mashed potatoes, gravy, dressing, croissonts, corn and hopefully I am not forgetting anything.
Eric is so cute he brought over two cans of chunky spicy chicken stew as his addition to the meal, he said “we can start them anytime”. Ha! We are so blessed to have him as our son, he makes me laugh. I am thinking maybe Jeff and Eric can have them for lunch. He knows I can’t do spicy and he laughed when I said “spicy!”
Not only am I thankful for Jeff and Eric and our health, I am also so thankful for my family and friends, you my faithful blog readers and my amazing customers and Di’s Country INKers team that allow me to do what I love every day and work from home and be here for my family.
I hope you enjoy your day and get to spend some time with family and get to eat lots of yummy food. I heard calories don’t count today.
