You know what is worse then shopping when you are hungry? That is looking at food online when you are hungry.  I found something a while ago that looked so good that used jello and I didn't have any jello so today while I was at the store I picked up jello, and now I have no clue what I wanted it for. Why I didn't book mark it, print it, I have no clue.

The other day I had a hankerin' for some coconut shrimp so when Jeff and I were at the store I picked up the ingredients.  So today after I got home from getting my hair done, I started getting the shrimp ready.  Boy those veins are a pain in the butt to remove, but I got it done, and then Jeff got home so he was in charge of the deep frying while I got them all battered up.

They were delicious, and I had picked up a ready made tangy orange dipping sauce and yummy! I will definitely make them again, and Eric was pretty impressed too.  When my BFF Tracy (Mwah!) comes to visit in February (hurry! hurry!) I am going to make them for her…if Becky Roberts' BFF Kim Sinclair (hey girls) wants them when she comes to visit next month, I'll make them for her too…any excuse right? Ha!

They were easy to make. Clean the shrimp, dredge it in regular flour, then dip it in a mixture of egg and milk, then put it in even parts panko and coconut mixed together.  Then deep fry till cooked.  If you google coconut shrimp recipes you can find them out there easily enough.

A couple weeks ago Jeff was watering the pine tree in the back yard and I was watching this dragon fly as it flew around, and it had another one hanging on it's butt.

At first I thought maybe they were "doing it" but then I thought well unless those parts are in odd places, I didn't think they were.  In fact the front guy looked like he was trying to get the back guy off, so he would dip him in the water, and wiggle around, and then fly more.

This went on for quite a while, in fact I even took some video cause I thought that he was like a snake and maybe trying to shed off his old skin. So finally after all the wiggling in the dirt and mud, the back guy came off.

I think I even said "yay! you did it!" in the video cause I thought he had shed his skin…but then the one on the ground started moving and then I was like what the heck? So I have no idea what they were doing, but it was still cool, and I love taking pictures with my big girl camera.

Added since original post…my sister, from another Mother, Jenn emailed me this: 

"most dragonflies after mating, accompany theis female to lay eggs, they both fly together, while the male's "tale" locked in to the female's head, the male accompanies the female to lay eggs. they both fly above the water the female "dips" her tale in to the water and lay her eggs."

I'll have to upload the video cause I thought it was cool.

The picture does not even show how gorgeous it is!

I put Christmas paper in my window frame display and I forgot to take a picture of it with cards on it, but I still want to make a mini banner for it.

I also added our Flurry Decor elements to the glass doors on my cupboards, I think I need to order another set, cause I want more snowflakes!!

Well I'm gonna sign off for tonight. I drank an International Coffee thing and it has given me a bit of a headache, makes me realize I don't need to drink those kinds of things no matter how good it tastes.

    I love Coconut Shrimp but I am going to have to google panko, not a clue. The card is great. I can't wait to see your Christmas display on the window frame.
