As much as I want to, it never seems to happen that I get time to make swaps when we host our Fall Fest and Spring Flings. As much as I say I want to get it all done so the day before it is a relaxing day that never happens. So I appreciated the girls that gave me a card at Fall Fest even though I didn't have one for them.

Well I am adding some pearls to my Founder's Circle swap and then I can put them in their cellos, and bag em up. Bag em Dano!

The other day I watched Giata on the Food Network and she made this caprese style dish so I thought I would do it tonight. Jeff's brother Tim was over and we all had eaten late or a big lunch so it was perfect.
It's just a layer of sliced tomatoes, sprinkle with balsamic vinegar, then a layer of fresh mozzarella, sprinkle with salt and pepper then add fresh basil chopped up, sprinkle with olive oil. Then put your bread on top and sprinkle with olive oil.
Bake in a preheated 375 degree oven for 25 minutes, let sit for 5 minutes and then eat. It was pretty good. It said to butter the dish and I don't know that was necessary with all the oils. I think next time I will put a layer of bread on the bottom and make it more like sandwiches, then probably the buttered dish might be better. Jeff did not like it as much as when I did the caprese salad…I just gotta remember how I did that before, I think it was just cold on bread? Hmmm…he couldn't remember either. Sucks getting old.
Well I better get back to work I really want to get these cards done before I get to bed. Then I can get to cutting DSP tomorrow.

I made this wonderful recipe over the summer and a couple of times since. I thoroughly enjoyed it as did my daughter.
This was the perfect quick meal after a day of shopping.
