Remember when we used to go eat at the Ynot Restaurant? All.The.Time. Well my favorite thing on the menu was their BBQ Chicken Salad, I mean the last night we were there, I wanted to weep in my salad, and I was saying "Good-bye BBQ Chicken Salad". Well while my BFF Tracy was here we thought we would try to make it, and we did pretty good, our taste buds were smiling. Once Tracy went home I made it again and this time I altered the white sauce a little bit. The Ynot put some of their coleslaw sauce on the salad, and their coleslaw was out of this world. So anyway, here is what it looks like and this is what I did if you want to try it, and if you do, let me know what you think.
White sauce:
3/4 cup ranch salad dressing
1/4 cup mayo
1/2 cup white sugar
2 tbsp. vinegar
salt and pepper to taste
Mix well and put in fridge till you need it. Meanwhile cook your chicken breasts. I use the Pampered Chef Microwave cooker thing, but just cook your chicken however you want, cut it up and cool.
On a plate, start to build your salad, we were lazy and just bought bags of salad, we got one with the carrots, lettuce and stuff in it, and we also bought a bag of spinach, so layer your salad on the plate, add your chicken, then add some cucumbers and tomatoes. We used baby tomatoes, cause they seem to taste riper then the regualar ones they sell in the store here in AZ. Then spoon on your white sauce, and also spoon on your BBQ sauce. We love Waldo's BBQ sauce, but you use what you like. Then add cheese to the top. Tell me this is not the best tasting salad ever. Oh Jeff likes onion, so he adds that.
Speaking of Jeff, he has been spending most of his evenings when he gets off work in his barn. My sister Jacqui mentioned that she was ready for a Jeff card again, so I went out the other day and took this picture.
Smile! So he would not let me hang out and this is all I could take, he did come in tonight for some cardstock. So I told him I want to post his card on Father's Day, so I need it by Saturday night, and he said ok.
I can hardly wait to see it. He can make art out of anything, you should see the light cover thingie he did for outside my studio, out of scrap metal, I need to find that on my computer. He was like that in school too. Not that I knew him then, but just what he told me and his family told me. I always think if we went to school together, he would not have looked twice at me. He was a jock, I was definitely not. He was popular in school, I was definitely not. Hey they say opposites attract.
So I wanted to show you another card everyone will make this weekend, I got the layout of this card from Anna Wight , hers is cuter, but I do like mine too. I just got this set. As a Demonstrator during Sale-a-Bration we earn stamp sets for free based on sales or recruiting. So this set was one I picked for free, and I got it a couple weeks ago (I wanted to wait for the retired list before I picked what I wanted).

I'm gonna have to try that salad – it sounds good! Ahhhh thanks for putting up a picture of Jeff! He looks so professional with his pencil behind his ear working with his shopsmith. Too bad you don't live closer….I'd hit him up to make me some book shelves!!!!
