Sneak “Peek”an Praline Muffins…

I have mentioned before when I go to Lois Claywell’s house when I do the 10/10/20 class for her and her friends, she always has awesome munchies.  The last time I was there she had these Praline Muffins and I ate so many I almost made myself sick…they are so good.  If you like pecans this recipe is for you.

Praline Muffins – by Lois

1 cup brown sugar, 1 cup chopped toasted pecans, 1/2 cup flour, 2/3 cup melted butter, 2 beaten eggs

(if you are cooking for a diabetic person, Lois says to substitute the 1 cup brown sugar with 1/2 cup splenda brown sugar)

Mix all the ingredients together in a small bowl.  Spoon into miniature muffin tins.  Bake for 20 minutes at 350 degrees.

Use Bakers Joy to spray pan.  Yields 24 muffins

Here they are after they came out of the oven…don’t they look good? They are…but can you see what the last line of the recipe said?

Use Bakers Joy to spray pan….well I did not have that but I did have something that rhymes with HAM, and well the little muffins were not coming out so well, about half of them looked like this…

DSCN7540 copy …this is the bottom, it was like one corner would stick…and usually when this happens with cookies or anything I bake, we eat the duds…cause it is all in the presentation right? Well after eating like 6 I was like, well crap I won’t have any left, so I just started propping them up on each other.  I will have to buy some of that Bakers Joy stuff.

So as I am typing this up the ACM’s are on, I love Country music.  I used to listen to KMLE on the radio all the time, till they got rid of Dave Pratt and brought back Tim and Willie, and well I am not a fan of those guys, so I don’t listen to the radio much anymore.  I just listen to the music I have uploaded on my computer, so I have missed some of the new songs as there were a few I had not heard.  And I don’t know if you agree with me on this, but I am so SICK OF Mylie Cyrus, blech!  It is great the young kids like her, and maybe she is bringing them over to country but she did not need to be on the show, and then they follow her with Montgomery Gentry…ha! talk about night and day.  I also missed Carrie Underwood getting on the stage before her performance (man that girl can sing…she knocks that Randy Travis song out of the water) or did she just appear, cause wasn’t her dress like part of the drapes or something?  Sugarland Nettles girl…umm…she almost lost her boobies…not attractive, I mean I say leave a little to the imagination and you look prettier.  I loved Matthew McConaughey’s George Strait boot story.  All I can say about Reba…class act!!!

Don’t you love this old lady?  I love that she has her slippers on and she is holding her purse. Was she going to town, when she saw those young hooligans out on her lawn, and she hadn’t had time to put on her shoes? Perhaps she was going to hit them with her purse like Ruth Buzzy always did on Laugh In, remember that?  That dirty old man would slide over to sit really close to her on the park bench, and wham! she would hit him with her purse.  I don’t remember if she ever was nice to him or not.

    Hey Di! A good choice for music while on your computer is http://www.pandora.com. You enter in an artist, or a song, and it plays songs that are similar, that it thinks you will like, along w/ the original song. You can thumbs up or thumbs down songs, and then it will modify its future selections based upon what you tell it. It's very cool, and very free. :O)

    Diana ~ I have this same recipe and make it all the time. I saw about the Baker's Joy but I just spray my mini tins with the generic cooking spray from Walmart. I get the kind in a green spray can, brand name – Great Value Canola Oil No Stick Cooking Spray. I've never had a problem and I make these muffins every other week for my Sunday school class.

    First of all, thank you for the recipe. If you don't have Baker's Joy, you can just butter and flour your tins (same thing as the Baker's Joy just a little extra work). I can't wait to try the muffins. I also watched the ACMA's last night and I too am SICK of Miley Cyrus. I don't even think she sings that well. Did you see Taylor Swift's outfit? She reminded me of a little girl whose mom puts a nice dress on her and then the girl throws a temper tantrum until she is allowed to wear her boots. Finally, your card is a riot. A good friend of mine was just telling me a story about her neighbor lady who keeps yelling at her to get out of her yard every time she's outside. My friend is actually in her own yard but the neighbor thinks it's hers. I will HAVE to get this set for her.

    Hi Di, I use to live in Phoenix and listened to KMLE but when they brought Tim & Willie back they thought they owned the town. I quickly quit listening to the radio, now I live in Tennessee close to Nashville and I love the Country music especially Carrie Underwood. As for you Pecan muffins I will have to try those I love muffins.
